What is the trend you are most excited about?
Fermentation in foods and beverages, as I believe once this is adopted on a mass scale, it will become a new “normal” once people start to feel the effects in their bodies. Studies show that cultures that consume fermented foods live longer, healthier lives thanks to the enhancement of bacteria and flora in their stomachs. Fermented goat’s milk, or kefir, is one of my favorites.
- Where do you think the “Future of Food” is heading?
Real ingredients, prepared in an honest way, real nutrition. People’s perception of value in long shelf life will decline and they’ll begin looking at perishability as a mark of quality ingredients. Hopefully, we are also getting to a point where people truly begin to understand the cause and effect relationship between eating habits and illness.
- What is the one thing you think the packaged food industry must do better in the year ahead?
Hold themselves accountable for creating change. No more “we make the food people like, we don’t make them eat it.” If that fails, only make food you would feed your own children.
- What is your favorite place to shop for food and why?
Farmer's markets, as I love to talk to the people who grew or created the food I feed to my family!
- What website, app or TV show you are addicted to?
The Newsroom; Aaron Sorkin is a genius with a script! I love TV that makes you think and question everything! Life is too short as it is; there is no time to watch stupid TV that doesn’t make you think.

As a co-founder of Unreal, he set out to healthy-up the quintessential junk food—candy—and managed to get the sugar content down by 50% without losing any of the indulgent taste.
